Anguilla is known as 'the cuisine capital of the Caribbean,' with a dining scene that offers more than 70 dining options from romantic gourmet seaside restaurants to casual beach grills. The very unique thing about Anguilla is how many restaurants and businesses are owned by locals. Anguilla has great grilled fish and cuisine is similar to what Americans know as "Caribbean". Some tips: the island is a desert, so fruits and vegetables aren't local; Every restaurant also has a great wine list; the local lobster is famous.
We loved Blanchard's (Meads Bay; 264/497-6100). Everyone said it was going to be the best and it was. It ranks up there as one of the best meals I've ever had. I enjoyed the Jamaican Jerk Shrimp with really tasty plantains. The goat cheese salad was amazing. The owners have written a couple books and are regulars on the Today Show.
We also loved Mango's Seaside Grill (Barnes Bay; 264/497-6479), which is ON the beach and serves great seafood. While we dined, a Reggae band played some very festive tunes. I loved the grilled, local-caught mahi mahi.
Tasty's Restaurant (South Hill; 264/497-2737), a local joint run by Malliouhana-trained Anguillan chef Dale Carty, conch salad and coconut-crusted parrotfish with spicy banana rum sauce are among the standouts. The service was not fabulous (island time) but the grilled tuna was perfect.

Malliouhana Hotel & Spa (Meads Bay; 800/835-0796), is a 5-star restaurant under the care of Chef Alain Laurent with French-Caribbean cuisine. The restaurant also houses 25,000 bottles of wine in its cellar and has been given Wine Spectator's "Grand Award".
Santorini at CuisinArt (Rendezvous Bay; 264/498-2000), offers a dining experience of Mediterranean cuisine. Guests can watch their meals being prepared behind the kitchen's glass walls. Weekends bring music and dancing. The CusinArt (named for the hotel's owner and creator of the Cusinart) has its own fancy garden and produces all its own vegatables and fruit.
Altamer (Shoal Bay West; 264/498-4040), offers acclaimed French chef Maurice G. Leduc, formerly of Maxim's in Paris, and his delectable French-Caribbean fusion preparations such as lobster-chicken-truffle sausage and orange-ginger roast duck.
The Barrel Stay Restaurant (Sandy Ground; 264/497-2831), is a small spot overlooking the ocean famous for its fish soup. The scene is relaxed and casual and menu is French and Creole.
Flavours (Sandy Ground; 264/497-0629) Chef Flemming from Cap Juluca's Pimms serves up West Indian cuisine in his own style.
George's at Cap Juluca (Maundays Bay; 264/497-6666), is a great place for lunch. Caribbean/Mediterranean selections. (Pictured above is the view from George's of St. Maarten).
